Salsa Fresca & Guacamole

January 30, 2019

I make a salsa fresca, also known as pico de gallo, whenever I cook Mexican food at home. The salsa can be eaten with chips and guacamole. Following are two easy recipes that that take less than 15 minutes to prepare, serves 4.

Salsa Fresca Ingredients Needed

  • 2 large, ripe tomatoes, finely chopped
  • 1/4 cup finely chopped purple onion
  • 1 jalapeno, less (or more) depending on desired heat
  • 5 stalks cilantro, I only use the leaves and don’t use the stalks. Finely chopped
  • 1 lime juice
  • Salt to taste
Salsa fresca

Mix the tomatoes, onion, jalapeno, and cilantro. Squeeze a lime into the mix. Add salt taste. Mix well.

Add salt last, mix well, enjoy!

We all know good guacamole when we taste it. The key is using fresh ingredients. Make sure the avocados are ripe, but not so ripe that the flesh is brown or soft. This guacamole is so good you will be licking your fingers.

  • 2 Ripe Haas avocados
  • One slice ripe tomato, finely chopped
  • 1/4 cup finely chopped purple onion
  • Cilantro to taste, finely chopped
  • 1/2 lime juice
  • Salt to taste
Guacamole ingredients

Cut and scoop out the avocados, place in large bowl. Add the onion, cilantro, tomato, jalapeno and lime juice. Using a fork, mash the avocado together. Add salt to taste, mix again. Set aside. Can eat with chips and salsa.

Mash ingredients lightly, mix well.
